Nettle Soup=20

A recipe from biologist David Funge for a delicious, chilled summer = soup=20 using the much maligned stinging nettle (Urtica dioica) .=20

There are some quite vile recipes around, many using potatoes, meat = stock and=20 so on. These invariably result in a hideously coarse concoction = guaranteed to=20 make your family and friends think you really have lost it! This recipe = gives a=20 delightfully sophisticated soup something like vichyssoise.=20

Needless to say, those with allergies should take advice before = trying this.=20 Likewise those unable to identify this plant. Avoid nettles you suspect = have=20 been sprayed or excreted on by animals (including humans). Make sure = they=20 are stinging nettles- the test is simple but convincing. To serve two good helpings you will need:=20

  1. Wash nettles thoroughly in cold water. Adding salt to the water = can be an=20 additional safeguard for the fastidious as the osmotic imbalance = drives most=20 creepie-crawlies out post haste. They'll be cooked anyway.=20
  2. Peel and chop onion finely.=20
  3. Peel and crush garlic=20
  4. Heat oil or butter in microwave or wok then add onion and garlic.=20
  5. Allow to soften fairly gently for about three minutes, then add = nettles=20 and stir. Cover=20
  6. Cook until nettles start to wilt and give a good stir.=20
  7. Add vegetable stock- about three quarters the volume of your = cooked=20 nettles and onion.=20
  8. Cover and simmer for twelve minutes, stirring occasionally.=20
  9. Remove from heat and allow to cool.=20
  10. Liquidise until you have an intensely green liquid(important = because this=20 ensures no stinging parts remain!) Add pepper and salt to taste (you = won't=20 need much).=20
  11. Chill right down in the refrigerator.=20
  12. Pour into bowls and add a swirl of natural yoghurt. Enjoy!=20

    Nettles are said to be rich in minerals and be a = useful=20 source of vitamins A and C. There are also recipes around to make them = into a=20 hair rinse. Alas quite a lot of the claims-especially on = the=20 Internet smack of quackery. My advice? If you like nettle soup be = content to=20 enjoy it.=20
